Our Natural Yellow Bourbon is made just like our Natural Yellow Caturra: We hand-pick ripe cherries and lay them to sun dry in a thin layer on wire screens. After up to three weeks of sun drying, we store the whole, dried cherries and let them rest for a few months before roasting to order.
